Multiresponse modelling of the caramelisation reaction

Quintas, Mafalda; Guimarães, Carla; Baylina, João; Brandão, Teresa R. S.; Silva, Cristina L.M.

Multiresponse modelling is a powerful tool for studying complex kinetics of reactions occurring in food products. This modelling technique uses information of reactants and products involved, allowing insightful kinetic parameters estimation and helping in clarifying reaction mechanisms. One example of a complex reaction that occurs in food processing is the caramelisation reaction. Caramelisation is the common...

Antioxidant activity of sugar molasses, including protective effect against DNA...

Guimarães, Carla M.; Gião, Maria S.; Martinez, Sidónia S.; Pintado, Ana I.; Pintado, Manuela E.; Bento, Luís S.; Malcata, F. Xavier

Extracts were obtained from molasses, a byproduct of the sugar industry, via a number of chromatographic steps. Their antioxidant capacity was studied, including the inhibitory effect upon DNA oxidative damage;the phenolic compound profile there of was ascertained as well. Two extracts exhibited significant antioxidant features, expressed by their capacity to decolorize ABTS radical cation and to scavenge hydro...

Continuous decolourization of a sugar refinery wastewater in a modified rotatin...

Guimarães, Carla; Porto, P.; Oliveira, Rosário; Mota, M.

Phanerochaete chrysosporium immobilized on different support materials, such as polyurethane foam (PUF) and scouring web (SW), in shake cultures, was able to decolourize efficiently the sugar refinery effluent in a long-term repeated-batch operation. The decolourization medium composition was optimized using PUF-immobilized fungus. Addition of glucose was obligatory and the minimum glucose concentration was fou...

The importance of the morphology and hydrophobicity of different carriers on th...

Guimarães, Carla; Matos, Cláudio; Azeredo, Joana; Mota, M.; Oliveira, Rosário

There was no direct correlation between the surface hydrophobicity or hydrophilicity of four solid carriers and the amount of immobilized Phanerochaete chrysosporium. The immobilized biomass was 1.5–1.8 times higher and the fungal degradation activity was 5–8 and 3 times greater in terms of decolorization and phenolics reduction, respectively, with porous carriers than with non-porous carriers.. Morphology of t...

Biodegradation of colorants in refinery effluents : potential use of the fungu...

Guimarães, Carla; Bento, Luis San Miguel; Mota, M.

The degradative ability of Phanerochaete chrysosporium towards each of the four;main types of colorants present in regeneration effluents from ion exchange resins was investigated. The fungus was able to decolorise melanoidin, caramel and HADP (hexose alkaline degradation product) solutions by 74%, 87% and 80%,. respectively, and to reduce levels of phenolic compounds by 72%. Gel permeation chromatography studi...
